These fluffy Greek yogurt pancakes are soft, thick and a little tangy. The yogurt does two jobs. It adds protein, and its acid reacts with baking soda to make the pancakes rise tall. You mix everything in one bowl, and breakfast is ready in about 20 minutes.
Quick Facts
- Prep time: 5 minutes
- Cook time: 15 minutes
- Total time: 20 minutes
- Servings: about 10 pancakes (3 servings)
- Difficulty: Easy
Ingredients
- 1 cup (245 g) plain Greek yogurt (2% or whole)
- 2 large eggs
- ¼ cup (60 ml) milk (any kind)
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Butter or oil for the pan
Why both baking powder and baking soda? Baking soda reacts with the yogurt's acid for fast lift. Baking powder adds a little more rise so the pancakes stay fluffy.
Step 1: Mix the Wet Ingredients
In a large bowl, whisk the yogurt, eggs, milk, honey and vanilla until smooth.
Step 2: Add the Dry Ingredients
Add the flour, baking powder, baking soda and salt right on top. Stir gently with a spatula just until no dry flour shows. The batter will be thick, much thicker than normal pancake batter. That's correct.
A few lumps are fine. Overmixing makes pancakes tough.
Let the batter rest 5 minutes while the pan heats. You'll see small bubbles form.
Step 3: Heat the Pan
Heat a nonstick pan or griddle over medium-low heat. Brush with a little butter or oil.
Test the heat: sprinkle a few drops of water. They should sizzle and dance, not disappear at once.
Step 4: Cook the Pancakes
Scoop about ¼ cup of batter for each pancake. Spread it gently with the back of the spoon into a 4-inch circle (thick batter doesn't spread by itself).
Cook 2–3 minutes, until the edges look dry and small bubbles appear on top. Flip and cook 1½–2 minutes more, until golden and cooked through.
Thick batter cooks slower inside. Medium-low heat lets the middle cook before the outside burns.
Step 5: Serve
Serve warm with berries, banana slices, a spoon of yogurt and maple syrup or honey.
Keep finished pancakes warm on a plate in a 200°F (95°C) oven while you cook the rest.
Tips for Fluffy Pancakes
- Don't overmix. Stop when the flour disappears.
- Rest the batter. 5 minutes helps it get bubbly.
- Use medium-low heat. Too hot and the outside burns before the middle cooks.
- Don't press the pancakes with the spatula. That pushes the air out.
Common Problems
Raw in the middle. The heat was too high. Lower it and cook a little longer.
Flat pancakes. Old baking soda or powder, or too much mixing.
Too thick to scoop. Add milk 1 tablespoon at a time.
Tastes bitter. Too much baking soda. Measure with a level spoon.

FAQs
Can I use flavored yogurt?
Yes, but plain is best. Vanilla yogurt makes them sweeter, so skip the honey.
Can I use regular yogurt instead of Greek?
Yes. Regular yogurt is thinner, so leave out the milk.
Why is my batter so thick?
Greek yogurt is thick. Spread each pancake with a spoon, or add a little milk.
Can I make the batter the night before?
It's best fresh. The baking soda loses power overnight.
