Homemade Pumpkin Spice Latte

📋 In this recipe

When the weather turns cool, a homemade pumpkin spice latte is one of the easiest treats you can make. You need milk, a spoon of real pumpkin, some warm spices, a little sugar and coffee. In about 5 minutes you get a creamy, cozy drink that tastes like fall in a mug. It costs much less than a café drink, and you decide how sweet it is.

You do not need an espresso machine. Strong coffee, instant espresso or a moka pot all work well.

Quick Facts

  • Prep time: 2 minutes
  • Cook time: 3 minutes
  • Total time: 5 minutes
  • Servings: 1 large mug (about 12 oz)
  • Difficulty: Easy

Ingredients

  • 1 cup (240 ml) milk (any kind: whole, oat, almond or soy)
  • 2 tablespoons pumpkin puree (plain pumpkin, not pumpkin pie filling)
  • 1–2 tablespoons sugar or maple syrup
  • ½ teaspoon pumpkin pie spice (plus a pinch to serve)
  • ½ teaspoon vanilla extract
  • ½ cup (120 ml) hot espresso (2 shots) or very strong coffee
  • Whipped cream to serve (optional)

Pumpkin puree vs pumpkin pie filling: Use plain pumpkin puree. Pie filling already has sugar and spices, so your drink can turn too sweet.

No pumpkin pie spice? Mix ¼ teaspoon cinnamon, a pinch of ginger, a pinch of nutmeg and a tiny pinch of cloves.

Step 1: Warm the Pumpkin and Spices

Put the pumpkin puree, sugar and pumpkin pie spice in a small saucepan. Stir over medium heat for about 1 minute. Warming the spices with the pumpkin wakes up their smell and makes the drink taste deeper.

Step 2: Add the Milk

Pour in the milk and whisk well. Heat until it is hot and steaming, about 2 minutes. Do not let it boil. Boiling milk can form a skin and taste flat.

Take the pan off the heat and stir in the vanilla.

Step 3: Froth the Milk

For a café-style foam, use one of these:

  • A handheld milk frother for 20–30 seconds.
  • A whisk, moving it fast back and forth.
  • A blender for 10 seconds (hold the lid with a towel, hot liquid expands).
  • A jar with a tight lid: fill halfway, close and shake hard for 30 seconds.

Frothing also blends the pumpkin, so the drink feels smooth, not grainy.

Step 4: Add the Coffee and Serve

Pour the espresso or strong coffee into a large mug. Pour the pumpkin milk on top. Add whipped cream and a pinch of pumpkin pie spice.

Taste and adjust. Want it sweeter? Add more sugar. Want more coffee flavor? Add another shot.

How to Make It Without an Espresso Machine

  • Strong brewed coffee: Use about twice the normal amount of grounds for ½ cup of coffee.
  • Instant espresso: Mix 1–2 teaspoons instant espresso powder with ½ cup hot water.
  • Moka pot: Makes strong, espresso-like coffee on the stove.
  • Cold brew concentrate: Great for the iced version.

Iced Pumpkin Spice Latte

  1. Whisk the pumpkin, sugar and spice with 2 tablespoons hot water until smooth.
  2. Stir in cold milk and vanilla.
  3. Fill a glass with ice, pour in cold espresso or cold brew, then add the pumpkin milk.
  4. Stir and enjoy.

Make-Ahead Pumpkin Spice Syrup

If you drink this often, make a syrup once and use it all week.

  • ½ cup (120 ml) water
  • ½ cup (100 g) sugar
  • ⅓ cup (80 g) pumpkin puree
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon vanilla

Simmer the water, sugar, pumpkin and spice for 5 minutes, stirring. Remove from heat and add vanilla. Strain through a fine sieve for a smoother syrup. Cool and keep in a clean jar in the fridge for up to 1 week. Use 2–3 tablespoons per drink.

Tips for the Best Latte

  • Use real pumpkin. It gives body and a gentle pumpkin taste.
  • Don't boil the milk. Hot and steaming is enough.
  • Froth well. Foam makes it feel like a café drink.
  • Start with less sugar. You can always add more.

Common Problems

It tastes gritty. The spices and pumpkin did not blend. Froth longer, or strain the milk before adding coffee.

It tastes weak. Use stronger coffee or add another shot.

Too sweet. Use 1 tablespoon sugar or skip the whipped cream.

The milk split. Plant milks can separate if they get too hot. Heat gently, and use a "barista" style oat or soy milk.

Variations

  • Dairy-free: Use oat milk and coconut whipped cream.
  • Lower sugar: Use a sugar-free sweetener and skip whipped cream.
  • Pumpkin chai latte: Use strong chai tea instead of coffee.
  • Caffeine-free: Leave out the coffee for a "pumpkin steamer" for kids.

Storage

This drink is best fresh. You can mix the pumpkin milk (without coffee) and keep it in the fridge for 2 days. Shake well, warm it up and add fresh coffee.
