Lasagna without wheat noodles and without cheese sounds hard. The two big challenges are simple, though: gluten-free noodles can get mushy, and you need something creamy to take the place of ricotta and mozzarella. This gluten free dairy free lasagna recipe solves both. It uses oven-ready gluten-free noodles and a smooth, lemony cashew "ricotta" that bakes up creamy and rich.
It's a great dish for family dinners when someone can't eat gluten or dairy, and everyone else at the table can enjoy it too.

Ingredients
Meat sauce
- 1 tablespoon olive oil
- 1 lb (450 g) lean ground beef or Italian sausage (check that sausage is gluten-free)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 jar (24 oz / 680 g) marinara sauce (check the label for gluten and dairy)
- 1 can (14.5 oz / 410 g) crushed tomatoes
- 1 teaspoon dried Italian seasoning
- ½ teaspoon salt and ¼ teaspoon black pepper
Cashew ricotta
- 1½ cups (200 g) raw cashews
- ⅓ cup (80 ml) water
- 2 tablespoons lemon juice
- 3 tablespoons nutritional yeast (gives a cheesy taste)
- 1 clove garlic
- ¾ teaspoon salt
- 2 cups (60 g) fresh spinach, chopped (optional)
For layering
- 12 oven-ready (no-boil) gluten-free lasagna noodles (about one 10 oz box)
- 1 cup (100 g) dairy-free mozzarella shreds (optional, for the top)
- Fresh basil for serving
Step 1: Soak the Cashews
Cashews need to be soft so they blend smooth. Cover them with water and soak for 2 hours. In a hurry? Cover them with boiling water for 10 minutes instead. Drain and rinse.
Step 2: Make the Meat Sauce
- Heat olive oil in a large pan over medium-high heat.
- Add the ground meat and onion. Cook for 7–8 minutes, breaking up the meat, until no pink is left. Drain extra fat. Too much fat makes lasagna greasy and soggy.
- Add garlic and cook 1 minute.
- Stir in the marinara, crushed tomatoes, Italian seasoning, salt and pepper. Simmer for 10 minutes.
The sauce should be a little thinner than a normal pasta sauce. Oven-ready noodles soak up liquid as they bake. If the sauce is very thick, add ¼ cup water.
Step 3: Make the Cashew Ricotta
Put the drained cashews, water, lemon juice, nutritional yeast, garlic and salt in a blender. Blend until thick and mostly smooth, scraping down the sides a few times. It should look like ricotta, not like a thin sauce.
Stir in the chopped spinach if using.
Step 4: Layer the Lasagna
Preheat the oven to 375°F (190°C).
- Spread 1 cup of sauce on the bottom of the 9×13 dish. This stops the noodles from sticking.
- Lay 4 noodles on top. Break pieces to fill gaps if needed.
- Spread half the cashew ricotta over the noodles.
- Spoon about 1½ cups sauce over the ricotta.
- Add 4 more noodles, the rest of the ricotta, and 1½ cups sauce.
- Finish with the last 4 noodles and all the remaining sauce. Make sure every noodle edge is covered with sauce, or it will stay hard.
- Sprinkle dairy-free mozzarella on top if using.
Step 5: Bake and Rest
- Cover the dish tightly with foil. Bake for 30 minutes.
- Remove the foil and bake 15 minutes more, until the sauce bubbles at the edges and the top is lightly browned.
- Check that the noodles are soft by poking a knife through the middle. It should slide in easily.
- Let it rest for 15 minutes before cutting. This helps the layers hold together.
Tips for the Best Lasagna
- Use oven-ready noodles. Pre-boiled gluten-free noodles often tear and turn mushy. Oven-ready ones cook right in the sauce.
- Cover the edges. Any part of a noodle not covered by sauce stays crunchy.
- Don't skip the foil. It traps steam that cooks the noodles.
- Be patient. Cutting it right out of the oven makes the slices fall apart.
Common Problems
The noodles are still hard.
There wasn't enough sauce, or the dish wasn't covered. Add ¼ cup water around the edges, cover again and bake 10 more minutes.
The lasagna is soggy.
The meat had too much fat, or regular (boil-first) noodles were overcooked. Drain the meat well and use oven-ready noodles.
The cashew ricotta is gritty.
The cashews weren't soaked long enough, or the blender is not very strong. Soak them longer and blend for an extra minute.
It falls apart when cut.
It needed a longer rest. Wait the full 15 minutes.
Swaps and Variations
- Vegetarian: Skip the meat. Use 2 cups chopped mushrooms and 1 diced zucchini instead.
- Nut-free: Use firm tofu (blended with lemon, nutritional yeast and salt) instead of cashews.
- Turkey: Lean ground turkey works well and keeps it lighter.
- Zucchini noodles: Use thin slices of zucchini instead of pasta. Salt them and pat dry first, or the lasagna will be watery.
- Regular noodles: If you don't need gluten-free, standard oven-ready noodles work the same way.
What to Serve With It
A simple green salad with olive oil and lemon goes perfectly. Roasted broccoli or green beans are also great. For bread, choose a gluten-free garlic bread made with olive oil or dairy-free butter.
Storage, Freezing and Reheating
Fridge: Cover and refrigerate within 2 hours. It keeps for 3–4 days.
Freezer: Lasagna freezes very well. Freeze the whole dish (baked and cooled) or single slices wrapped in plastic wrap and foil for up to 3 months. Thaw overnight in the fridge.
Reheat: Warm single slices in the microwave for 1½–2 minutes. For a large piece, cover with foil and bake at 350°F for 20–25 minutes. Heat until hot in the middle (165°F / 74°C).

FAQs
Can I make it ahead of time?
Yes. Assemble it, cover it and refrigerate for up to 24 hours. Add 10–15 minutes to the covered baking time.
Does cashew ricotta taste like real ricotta?
Not exactly, but it's creamy, slightly tangy and mild, so it works very well inside lasagna.
What is nutritional yeast?
It's a yellow, flaky seasoning that tastes a little cheesy. You'll find it in most grocery stores near the spices or health foods.
Do I need to boil oven-ready noodles?
No. They soften in the oven as they soak up the sauce.
Is store-bought marinara gluten-free?
Many are, but not all. Always read the label for wheat and dairy.

A Final Note
The two keys are plenty of sauce and a long enough rest. Cover every noodle, keep the foil on for the first half of baking, and wait those 15 minutes. You'll get clean, creamy slices that nobody will miss the cheese in.
