Tiramisu means "pick me up" in Italian. It's layers of crisp ladyfinger cookies dipped in coffee, a thick, sweet mascarpone cream, and a dusting of bitter cocoa on top. Many versions add marsala wine, rum or coffee liqueur, but the classic flavor comes mainly from the coffee, mascarpone and cocoa, so it's easy to leave the alcohol out. This authentic Italian tiramisu recipe without alcohol also gently cooks the egg yolks, so you don't have to worry about raw eggs.

Ingredients

  • 4 large egg yolks
  • ½ cup (100 g) granulated sugar
  • 16 oz (450 g) mascarpone cheese, cold
  • 1 cup (240 ml) cold heavy cream
  • 1 teaspoon vanilla extract
  • 1½ cups (360 ml) strong brewed coffee or espresso, cooled
  • 1 tablespoon sugar (for the coffee, optional)
  • About 24 crisp ladyfingers (Savoiardi), one 7 oz / 200 g pack
  • 2 tablespoons unsweetened cocoa powder

Ladyfingers: Use the crisp, dry Italian Savoiardi type. Soft, cake-like ladyfingers turn mushy.

Mascarpone: It's a soft, rich Italian cream cheese. Keep it cold until you use it. Warm mascarpone can turn runny.

Step 1: Cook the Egg Yolk Cream

Traditional tiramisu uses raw eggs. Here we gently heat the yolks to make them safe.

  1. Fill a medium pot with about 1 inch of water and bring it to a low simmer.
  2. In a heatproof bowl that sits on top of the pot (without touching the water), whisk the egg yolks and ½ cup sugar.
  3. Whisk constantly for 4–6 minutes, until the mixture is pale yellow, thick, and reaches 160°F (71°C) on a thermometer. Without a thermometer, it should be thick enough that a ribbon of it sits on top for a moment when you lift the whisk.
  4. Take the bowl off the heat and let it cool for 10 minutes, whisking now and then.

Step 2: Make the Mascarpone Cream

  1. Whip the cream. In a cold bowl, beat the heavy cream and vanilla until stiff peaks form. That means when you lift the beaters, the cream stands up in firm points. Set aside.
  2. Mix the mascarpone. In another bowl, gently stir the cold mascarpone with a spatula until smooth. Add the cooled yolk mixture and fold until blended. Don't beat it hard, or the mascarpone can turn grainy.
  3. Combine. Gently fold the whipped cream into the mascarpone mixture in two parts until smooth and fluffy.

Step 3: Dip the Ladyfingers

Pour the cooled coffee (with 1 tablespoon sugar stirred in, if you like) into a shallow dish.

Dip each ladyfinger quickly: 1–2 seconds per side. That's it. They should be wet on the outside but still a little firm inside. They soften more as the tiramisu chills. Soaking them too long makes the dessert soggy and watery.

Step 4: Layer

  1. Place a single layer of dipped ladyfingers in the bottom of the dish (about 12). Break pieces to fill gaps.
  2. Spread half the mascarpone cream evenly over the top.
  3. Add another layer of dipped ladyfingers.
  4. Spread the rest of the cream and smooth the top.

Step 5: Chill and Dust

Cover and refrigerate for at least 6 hours, ideally overnight. This lets the cookies soften and the cream set so you can cut clean slices.

Just before serving, sift the cocoa powder evenly over the top using a small strainer. Adding cocoa right before serving keeps it from getting damp.

Tips for the Best Tiramisu

  • Cool the coffee completely. Warm coffee melts the cream.
  • Fast dips only. This is the most common tiramisu mistake.
  • Fold gently. Air in the cream keeps it light.
  • Be patient. Tiramisu is better on day two.
  • Use a hot knife. Dip the knife in hot water and wipe it for neat slices.

Common Problems

It's watery. The ladyfingers were soaked too long, or the coffee was warm. Dip quickly and cool the coffee fully.

The cream is runny. The cream wasn't whipped to stiff peaks, or the mascarpone was warm. Keep everything cold.

The cream is grainy. The mascarpone was beaten too hard. Stir it gently with a spatula.

It's hard to slice. It needs more chilling time. Give it a few more hours.

Variations

  • Decaf version: Use decaf coffee for kids or evening parties.
  • Alcohol flavor without alcohol: Add ½ teaspoon rum extract or almond extract to the coffee.
  • Strawberry tiramisu: Dip ladyfingers in strawberry juice and add sliced strawberries between the layers.
  • Individual cups: Layer broken ladyfingers and cream in small glasses.
  • Chocolate layer: Sprinkle grated dark chocolate between layers.

Serving Ideas

Serve chilled, cut into squares. A few fresh raspberries or a small cup of espresso on the side go perfectly.

Storage and Freezing

Fridge: Keep covered for up to 3 days. Because it contains dairy and eggs, don't leave it out for more than 2 hours.

Freezer: Tiramisu freezes surprisingly well. Wrap tightly and freeze for up to 1 month. Thaw in the fridge overnight, then dust with fresh cocoa. The texture may be slightly softer.
