Busy day? This is the soup for it. You put chicken, tomatoes, beans, corn and spices in the slow cooker, turn it on, and walk away. At dinner time, you shred the chicken, stir it back in, and add crunchy tortilla strips on top. This crockpot slow cooker chicken tortilla soup is warm, a little smoky and mildly spicy, and every person can choose their own toppings.

Why Not Use Frozen Chicken?
It's tempting, but put thawed chicken in the slow cooker. Frozen chicken warms up too slowly and stays in the "danger zone" (40°F–140°F) for too long, where bacteria can grow. Thaw it overnight in the fridge first.
How to Make It
-
Add the vegetables and spices. Put the onion, garlic, both cans of tomatoes, black beans, corn, chili powder, cumin, smoked paprika, oregano and salt into the slow cooker. Stir.
-
Add the chicken. Place the chicken on top in one layer. Pour the broth over everything.
-
Cook. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours. Try not to lift the lid. Each peek lets out heat and adds cooking time.
-
Check the chicken. The chicken is done when it reaches 165°F (74°C) in the thickest part and pulls apart easily with a fork.
-
Shred it. Take the chicken out onto a plate. Shred it with two forks, then stir it back into the soup.
-
Finish. Stir in the lime juice and cilantro. Taste and add more salt if needed. Lime added at the end keeps its fresh taste.
Make the Crunchy Tortilla Strips
Store-bought chips work, but homemade strips are crunchier and less greasy.
- Heat the oven to 400°F (200°C).
- Cut the corn tortillas into thin strips, about ¼ inch wide.
- Toss with oil and a pinch of salt. Spread on a baking sheet in one layer.
- Bake for 8–12 minutes, stirring once, until golden and crisp. Watch closely near the end. They go from golden to burnt quickly.
Air fryer option: Cook at 375°F for 5–7 minutes, shaking twice.
Tips for the Best Soup
- Chicken thighs stay juicier. Breasts work, but thighs are harder to dry out on long cooking days.
- Fire-roasted tomatoes add flavor. They give a light smoky taste with no extra work.
- Add toppings at the table. Tortilla strips get soggy fast in the soup. Add them just before eating.
- Make it thicker. Mash some of the beans against the side of the pot, or stir in ¼ cup masa harina (corn flour) mixed with ½ cup water 30 minutes before the end.
Common Problems
The chicken is dry.
It cooked too long, usually breasts on HIGH. Use thighs, or check breasts at the shorter time.
The soup tastes flat.
It needs salt and acid. Add a pinch of salt and more lime juice. These two things wake up the flavor.
It's too spicy.
Add a spoonful of sour cream or yogurt to each bowl, or stir in extra broth. Next time, use plain diced tomatoes instead of the green chile kind.
It's too watery.
Take off the lid for the last 30 minutes on HIGH, or use the masa trick above.
Easy Variations
- Spicier: Add a chopped chipotle pepper in adobo sauce or a diced jalapeño.
- Creamy: Stir in 4 oz soft cream cheese at the end until melted.
- Rotisserie chicken: Skip raw chicken. Cook the soup for 2 hours on HIGH, then add 3 cups shredded cooked chicken for the last 30 minutes.
- Stovetop: Simmer everything in a pot for 25–30 minutes, until the chicken reaches 165°F.
- Bean swap: Use pinto beans instead of black beans.
What to Serve With It
The soup is a full meal by itself, but cornbread, a simple green salad or quesadillas are nice on the side. For a fun dinner, you can also pair it with tacos. For a soup-and-sandwich night, a warm chicken pesto panini goes nicely on the side.
Storage, Freezing and Reheating
Fridge: Cool and refrigerate within 2 hours. Keep it in airtight containers for 3–4 days. Store tortilla strips separately in a dry container at room temperature.
Freezer: This soup freezes well (without toppings or tortilla strips). Freeze in containers, leaving 1 inch of space at the top, for up to 3 months. If you added cream cheese, it may look a bit grainy after thawing. Stir well while reheating.
Reheat: Warm on the stove over medium heat, stirring, until it's steaming hot (165°F / 74°C), about 8–10 minutes. Or microwave single bowls for 2–3 minutes, stirring halfway.

FAQs
Can I put raw chicken in the slow cooker?
Yes, raw thawed chicken is fine. It cooks fully in the soup. Just check that it reaches 165°F.
Can I cook it longer than 8 hours?
Many slow cookers switch to "warm" after cooking, which is fine for a couple of hours. Cooking on LOW much longer can make the chicken dry and stringy.
Is chicken tortilla soup spicy?
This version is mild to medium. The green chiles add flavor more than heat. Add jalapeños or chipotle if you like it hotter.
Can I use flour tortillas?
Yes, for topping strips. Corn tortillas give a more classic taste and keep the soup gluten-free.
Can I make it in an Instant Pot?
Yes. Cook on high pressure for 10 minutes, then let the pressure release naturally for 10 minutes.
